Italian Sugar Cookies

Today I wanted to share a recipe for cookies that I made this year for Christmas! It was the first time I tried it, and they turned out really great! Now…I made this for Christmas, but they make great little coffee dunkers! They’d be perfect for that girl’s luncheon, or maybe even a Sunday Brunch treat!

Here’s what you need for the cookies:

4 eggs

1 cup sugar

1/2 cup butter

2 tsp. vanilla

3 1/2 cup flour

4 tsp. baking powder

Here’s what you need for the icing:

2 cups powdered sugar

2 tsp. vanilla

6 tsp. water

Combine dry ingredients and sift together. Cream the butter and sugar, then add eggs and vanilla. Mix with sifted dry ingredients. Knead dough with hands until it no longer sticks to your fingers.

Take a small amount of dough and roll in between hands to form a log. Twirl into shape. Place cookies on a prepared cookie sheet and back for 10 minutes at 375.

To make icing, sift 2 cups of powdered sugar. Combine with 2 tsp. of vanilla, and 6 tsp. of water. Stir until creamy and there are no lumps. Dip each cookie (upside down) into the icing, and place to rest on a cooling rack with wax paper underneath. (To catch the icing drippings). While the icing is still wet, decorate with sprinkles.

We really enjoyed dunking these into our coffee and hot cocoa. They aren’t too sweet which was a nice break from the other clawingly sweet treats we had for Christmas! I hope you enjoy!
